Avocado Egg Salad

If you love avocado then you will love this recipe. This recipe will make 4 servings. I am usually looking for a quick breakfast that is still healthy, filling, and something different outside the standard eggs, bacon, and bread. If you are too.... TRY THIS!

 

I usually boil a whole dozen of eggs in advance, makes it easy to quickly throw everything together for later.  I usually several avocados but only use one at a time so that my salad doesn't brown. I also use red onion a lot so I cut a full onion in slices (not diced) in leave in a container in fridge for easy access. This allows me to quickly whip up the next batch once I am ready. In my house, I am not the only healthy eater so this stuff goes fast! 

 

Breakfast, Snack, or Lunch this is a great recipe to add to your menu.

 

The recipe below is the avocado egg salad by itself but you can put it on top of wheat toast, fresh baby spinach, or a tortilla.
